STUDY OF WATER-SOLUBLE POLYSACCHARIDE FROM MELON PEEL Melo mill

This study presents the results of an investigation into a water-soluble polysaccharide extracted from the melon peel (Melo mill). Particular attention was given to infrared (IR) spectroscopic analysis, which was used to determine the structural characteristics of the isolated compound. The IR spectra recorded in the range of 4000–400 cm⁻¹ revealed the presence of typical functional groups, including hydroxyl, carboxyl, and ether groups, as well as β-glycosidic linkages. The presence of absorption bands corresponding to COO⁻ ions and other signals indicated that the polysaccharide belongs to the group of low-esterified compounds. The results confirm the hydrophilic nature and natural origin of the sample and provide insight into its structural and functional properties.
